This little strip-mall unit with kitschy murals and mementos only masquerades as a greasy spoon. Everything at Jethro's is homemade and made well. Chef/owner Greg Seader has worked at a dozen fine dining establishments in Tucson, but when it came time to open his own place he eschewed dinner for the chance to focus on serving some of the best homestyle breakfast and lunch fare in town.
